Chocolate Chip Granola!

I really like granola. I know I've only posted one recipe but still. I think I'm obsessed.


I've spent months searching for the right granola bar recipe. I wanted chewy, chocolaty, a little bit crunchy, and healthy. Is that too much to ask for? Apparently, so.


No one else had created the perfect recipe yet, so instead of making granola bars, I made everything else. All the muffins, cookies, and cakes were delicious, but I always came back to the classic granola bar. When I was browsing foodgawker for the 10000th time, I decided this had to stop. I needed to do something. I needed to make my own granola.


So, guess what? I did it. I made granola bars that are healthy, (They have no oil or butter at all) chocolaty, and the perfect combination of chewy and crunchy.


I'm still in denial that I even managed to take pictures. I ate could eat a whole pan of these.


Funny story about the pictures though. The lighting in the kitchen was awful, so I ended up taking these pictures outside. Hiii neighbors...I swear I'm somewhat normal.



Luckily my mom was the only one to see me awkwardly crouched on the patio trying to take a picture with good lighting, and she's used to my weirdness. She's weird too.



Sorry. I've gotten terribly off topic. Here's the recipe, and if you have any time, go make these. In fact if you don't have time, go make these. For reals. 

Chocolate Chip Granola Bars

Ingredients:

  • 1 cup of rolled oats
  • 2/3 cup of crispy rice cereal
  • 1/3 cup raw honey
  • 1/4 cup brown sugar
  • 1/3 cup whole wheat flour
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup of applesauce
  • 1 1/2 cup nuts/dried fruit/chips of choice (I used chocolate chips only)

Directions
  • Preheat oven to 350F
  • Mix all dry ingredients together
  • Melt honey and applesauce and add to dry ingredients
  • Add vanilla
  • Put bars in a 9X9 (or bigger) baking dish
  • Bake for 20-25 minutes
  • Let cool/refridgerate 20 minutes before eating (or burn your tongue and eat them hot!)
  • Hide the bars before you eat them all
