Happy Pi Day!

If you haven't been on Facebook, Twitter, Instagram, or any other social media site for the matter on a Thursday, then you are really missing out. Or maybe you're really fortunate. The hashtags '#TBT' or '#ThrowBackThursday' are taking the web by storm. What does this mean you may ask? 
Well, if you have an old picture of yourself or a past lunch that you forgot to post. You post it! Thursday is now an excuse to post these old pictures and relive the glory days.



I normally don't get into such trends, but when it's National Pi Day (3-14!), and I have an old pie recipe that's begging to be posted, then I may make a teensey weensey exception. Just this once though.


 When I say pie recipe, I don't mean the big pies that are so, well, mainstream now. I mean adorable miniature pies and pie pops. Bite size stuff. 


Forget the #ThrowbackThursday trend. I think I'm bringing the #PiePops trend in. Bye bye cake pops, your ship has sailed!


So, if you haven't already celebrate National Pi Day, why not start right now?

Blueberry Pie Pops

      Pie Pop Filling:
  • 4 to 5 cups of blueberries
  • 1 cup of sugar
  • 1/4 cup flour
  • 1 tablespoon of lemon juice
      Pie Pop Crust
  • 1 cup of flour
  • 1/2 tsp. of salt
  • 1/4 cup of oil
  • 3 tablespoons of ice water

Preheat the oven to 350 degrees.

Mix all of the pie filling ingredients together in a medium size bowl and set aside

Mix the flour and salt together in a bowl. 
Separately from the dry ingredients, mix the oil and water together until the mixture looks milky.
Add the oil and water to the dry ingredients and mix. 
Roll out into a crust adding water or flour if needed.

Roll out pieces of crust into the size of a small, round glass, and fill with the pie filling. 
Pinch the edges of the crust around a cake pop stick

Lay on a greased baking sheet, and bake for 5-8 minutes (Maybe more depending on your oven!).


If you want to make the miniature pies instead of pie pops, just buy Phyllo Shells and use them as the crust instead. Everything else stays the same! Happy Pi Day!
