Crunchy Granola with a Little Bit of Everything!

Granola is becoming a weekly staple on my blog. Oh yes, you may think that I'm just very forgetful and therefore constantly posting new granola recipes, but I'm not. I just really like granola.


About a week ago, I created my Crunchy Peanut Butter Granola. It was fantastic. I thought I had created the be all end all of granolas. My family loved it and all was well in the household for a grand total of 10 minutes. Why only 10 minutes? Because 10 minutes was all it took for that voluminous bowl of granola to become an empty bowl with not a single crumb left. 


This empty granola bowl slowly became a problem. So of course, in an attempt to be a crowd pleaser, I set off to 'beef up' my granola and create a longer lasting version of this household staple.


I started out my quest by asking my family for advice and requests. That's always a good place to start, you see. My brother suggested chocolate and peanut butter chips in the granola (A man after my own heart!). My Mom requested chopped almonds and peanuts that were toasted, and my Dad suggested toasted coconut.
 

Drum roll please. Whose advice did I end up taking? Well, I used all of my family's ideas and suggestions and compiled them into one massive granola that is definitely 'beefed up'.


I can't take the credit for this marvelous creation though. My Mom, Dad, and Brother are the masterminds and geniuses behind this creation. I am simply the glue that brings these genius ideas together by forming granola.


Crunchy Granola (Beefed Up!)
Prep Time: 15-25 depending on how fast it cooks for you!

Ingredients:

  • 1 Cup of Oats 
  • 2 tbsp. Peanut Butter (I've used both creamy and crunchy)
  • 2 tbsp. Honey
  • 1/4 tsp. Cinnamon
  • 1/4 tsp. Vanilla Extract
  • 1/4 Cup (or more!) of nuts of choice (I used almonds and peanuts)
  • 2-4 tbsp. of sweetened coconut
Directions:
  • Preheat oven to 325 degrees.
  • Spray 2 cookie sheets with non-stick cooking spray and set 1 aside.
  • Toast the chopped nuts and coconut for 5-10 minutes or until lightly brown on 1 of the cookie sheets. Set aside.
  • Combine peanut butter and honey in a bowl and microwave 20-20 seconds.
  • Stir the cinnamon and vanilla into the peanut butter and honey mixture.
  • Add oats and stir until oats are completely covered by the wet ingredients.
  • Add toasted ingredients to the oat and peanut butter mixture.
  • Spread out the granola onto the prepared cookie sheet and bake for 15 minutes or until granola is slightly browned.
  • Let cool until granola is crunchy, or eat straight out of the oven!

  9. Mmmm! That granola looks amazing! Love the addition of the chocolate and pb chips! Hey, it's all about the balance...healthy indulgence! ;) My favorite granola? Oh man, that's a toughie...not sure I've ever met one I didn't like...no, I take that back, I had a gingersnap granola once that was so spicy it hurt my tongue! :( Lately, I've been loving on some blueberry almond granola that a friend made for me...it has a TON of dried blueberries in it (my fave!)

    1. I feel the exact same way! As of now, I've never had a granola I've really disliked, but if it was really spicy like that gingersnap one, I probably would be reluctant to have it again! Blueberry almond granola sounds delicious! My brother just loves blueberries, so I may need to try that one! :) Thanks for some great ideas!
