Crunchy Peanut Butter Granola!

Friday, May 10, 2013

It's that dreaded time of year again for anyone in school. Yep. It's finals week. For most people that means studying 24/7 and eating lots of chocolate bars and drinking lots of caffeine.

That's alright for some people. I need substance though. I need a snack that is tasty and healthy. I need a snack that will make me look forward to study time. (Ok, maybe that's stretching it!)

I'm personally not a coffee drinker, so I needed to create something that made me feel and warm and nice inside like coffee does to some people. So obviously I turned to my two favorite things: peanut butter and granola. Then I did something marvelous. I combined the two. It's so simplistic yet so genius if I say so myself.

Grab your oven mitts! It's time to get your study snack on, the Peanut Butter Runner way!

Crunchy Peanut Butter Granola

Ingredients:
  • 2 tbsp. Peanut Butter (I've used both creamy and crunchy)
  • 2 tbsp. Honey
  • 1/4 tsp. Cinnamon
  • 1/4 tsp. Vanilla Extract
  • 1 c. Oats
Directions:
  • Preheat oven to 325 degrees.
  • Spray a cookie sheet with non-stick cooking spray and set aside.
  • Combine peanut butter and honey in a bowl and microwave 20-20 seconds.
  • Stir the cinnamon and vanilla into the peanut butter and honey mixture.
  • Add oats and stir until oats are completely covered by the wet ingredients.
  • Spread out the granola onto the prepared cookie sheet and bake for 15 minutes or until granola is slightly browned.
  • Let cool until granola is crunchy, or eat straight out of the oven!

I can't decide what's better, the fact that this can be made in less than 20 minutes or the fact that I now have no excuse to study and eat healthily while doing it!

If you're taking finals this week like me, good luck! If you're way to busy to make this whilst studying, no worries! This granola is the perfect way to start summer vacation! What better way to start off summer then with peanut butter? Happy Thursday!  :)
