Healthier Chocolate Chip Cookies!

Monday, June 10, 2013

By now you know that 'Healthy Cookies' are not an oxymoron on my blog. After a successful baking adventure that resulted in 65 Calorie Peanut Butter Cookies, my Mom decided that she liked this whole Healthy Cookie Bandwagon that I was on.

Since I was 1/1 in my healthy cookie adventures, I decided I would take on the classic. Chocolate Chip Cookies; My Mom's favorite.

As you know from my almond butter fail post, I don't always hit a homeroom with my recipes. In my humble opinion, these are out of the park. Delicious AND healthier than your average cookie? I'm in.

Healthy Chocolate Chip Cookies

Ingredients:

  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 5 tablespoons unsalted butter
  • 1/2 cup of dark brown sugar packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup of semisweet chocolate chips

Directions
  • Preheat the oven to 375F.
  • Line two large baking sheets with parchment paper.
  • Whisk the flour, salt, and baking soda together in a bowl.
  • Melt 3 tbsp of butter in an 8 inch skillet over medium-high heat for about 3-5 minutes or until the butter is golden brown and has a nutty aroma.
  • Transfer the browned butter to a large bowl and stir in the remaining 2 tablespoons of butter until completely melted.
  • Whisk the sugars and vanilla into the melted butter.
  • Whisk in the egg until the mixture is smooth. Let the mixture stand for 3 minutes, then whisk vigorously for 30 seconds. Repeat the process of resting and mixing 2 more times.
  • Stir in the flour mixture and chocolate chips.
  • Make dough balls the size of 1 tablespoon spacing them 2 1/2 inches apart.

  9. I absolutely love how you healthified these but didn't do anything crazy like try to completely leave out butter or anything. In my opinion, every cookie needs some butter :) Really, these look awesome. I'll have to give them a try sometime!

Warning: The dough and cookies make these cookies taste like they have all the normal butter and fat, meaning it's delicious!
