Marvelous Cheese Muffins!

Sometimes you just need two muffins.




Or three.


Or...um...six?


 You know what? Sometimes you just need a WHOLE basket full of warm cheesy muffins.


These muffins are from a recipe that my Mom has had forever.


My mom calls these 'Marvelous Cheese Muffins'. I don't blame her. These muffins are slightly sweet and very savory making them nothing short of marvelous.

Marvelous Cheese Muffins

Servings: 12 Muffins
Prep Time: 10 Minutes
Cooking Time: 20-25 Minutes

Ingredients:

  • 1 and 3/4 Cup all purpose flour
  • 1 Tablespoon baking powder
  • 1/2 Teaspoon salt
  • 2 Tablespoons sugar (white)
  • 3/4 Cup (3 oz) grated sharp cheddar cheese
  • 1 egg
  • 1 Cup milk
  • 1/4 Cup butter, melted
Directions:
  • Preheat oven to 400F.
  • Grease a muffin pan (one for 12 muffins!)
  • Combine the first four ingredients in a large bowl. 
  • Add cheese and mix well. 
  • Make a well in the center of the bowl and set aside.
  • Combine egg, milk, and butter in a medium bowl. 
  • Add mixture to the well. 
  • Stir until the batter is moistened. (Be sure not to over stir  or the muffins will be hard!)
  • Cook for 20-25 minutes or until the top of the muffin is a golden brown color.

  3. I LOVE cheddar cheese muffins! I had some a few years ago that had cheddar plus jalapeno pepper in them, so delicious. But this recipe sounds so basic in that classic, can't-go-wrong kind of way...yum :)

    In my family, the chocolate layer cake and apple pie recipes are pretty legendary. I've never made either, but it would feel like such an accomplishment if I did!

    I think my favorite kind of muffins are on the sweet side.... I used to do an apple muffin that I was in love with. Hmm... need to bring that one back!
