Peanut Butter Cookies! (65 Calories)

Sometimes you make mistakes. After editing these pictures, I realized I didn't like the fabric in the backdrop. It kept bothering me, and eventually I began to debate whether or not I should even post this recipe. 




You may have guessed it, but I finally decided to post the recipe. No backdrop failure will keep me from sharing these 65 calorie cookies with you. 


Since it's a new month, I figured that the best way to start any month off on the right foot was with peanut butter. These cookies are effortless and full of peanut butter, two necessities in my cookie baking career.


I was so excited at how tasty these cookies were, that I found it necessary to take pictures that look like I'm advertising a peanut butter brand. That was not the intention I can assure you.


Grab a knife and the biggest peanut butter jar you can find (mine is a 4 pound jar!) and get ready to make soft and peanut buttery cookies that are so healthy that you'll want to keep this recipe a secret!



Peanut Butter Cookies

Prep Time: Around 20 Minutes
Yields: 12-16 Cookies

Ingredients:


  • 1/2 cup peanut butter
  • 3/4 tsp baking soda
  • 3 tbsp whole wheat flour
  • 1/4 cup plus 2 tbsp brown sugar
  • 2 tbsp applesauce
  • 1/2 tsp pure vanilla extract
Directions:
  • Preheat oven to 350F.
  • Mix dry ingredients very well. 
  • Add wet ingredients to the dry and mix.
  • Form into small balls. (Should make 12-16)
  • Refrigerate the dough for around an hour.
  • Bake for about 8 minutes. When they come out, they look soft and slightly overdone, but that's how it's supposed to be!

    1. I completely understand! I've done so many peanut butter/banana recipes so far that I think it's time to try something new! I love vanilla and coconut too, so I'll see what I can do :) Hopefully I can bring you something SOON when we come to visit!

    3. On the granola recipe, could I omit the peanut butter and double the honey? Do you think that would work? And I was thinking some butterscotch chips.... I'm depending upon your cooking expertise!

      Aunt Pam- I've never tried it with double honey, but it may work! I've heard of substituting oil and butter for the peanut butter too! That'll be my next project for you!

  10. oh my goodness...a 4 lb jar of PB?! Must get on finding me a jar. My birthday is coming up...I think that would make the perfect present:) And peanut butter cookies are my absolute favorite!! And at only 65 calories ohmygoodness!!!!!!
