Homemade Carrot Soup!

The only thing better than a cup of tea, is using the tea cup as a bowl for homemade carrot soup. Fact.


We've been on a soup kick at my house lately. From lentil soup, potato soup, leek soup, and tomato soup, the amount of soup I've consumed in 2014 is at an all time high.

What have I learned from the amount of soup I've had in this new year? Homemade soup is one of the greatest things this world has to offer.


If you're like me and you sometimes find it hard to get enthused about vegetables, carrot soup is like drinking all the vegetables you need. And it tastes good. And it has greek yogurt in it. (Greek yogurt is always a good idea.)



Homemade Carrot Soup

Ingredients

  • 4 Cups Carrots (sliced)
  • 1 Medium Onion
  • 1 Sweet Potato
  • 1 Celery (with leaves, sliced)
  • 3 Cups Broth
  • 2 Leaves Basil
  • 1 Teaspoon Turmeric
  • Pinch Cayenne
  • 2 Cloves Garlic
  • 3/4 Cup Greek Yogurt
Cooking Directions

  1. Steam the vegetables in a teaspoon of olive oil for 5 minutes.
  2.  Add broth and bring to a boil, uncovered, for 15 minutes. 
  3. Cover and simmer for 15 more minutes. 
  4. Add seasonings and blend. 
  5. Add Greek yogurt. 
  6. Serve and enjoy!

  5. This almost looks like a dip cause it looks so thick! I love thick soups/stews so I think I would LOVE this. I also enjoy using coffee mugs for soups!

  6. This is the second soup blog post I've seen in ten minutes! And I've been talking about making soup forever with my husband, but have yet to do it. So this is a sign. I think you're right, Greek yogurt is never a bad idea- thanks for the soup encouragement :)

    My favourite soup is a mushroom and barley soup, so hearty and delicious and I've made it many times.
