Peanut Butter Banana Oatmeal Cookies.

Before I officially start this post, I would just like to send a shout out to Gwen Stefani because her song 'Hollaback Girl' is the only reason I know how to properly spell the word bananas . Yes, I'm nearly a legal adult, and I still have spelling issues.

Anyways, now that that's over, we can get on to more important things. Like cookies. Healthy cookies specifically.



If you've never wanted cookies for breakfast, you're probably lying to yourself.

It's time to face the facts: Breakfast is the best meal of the day, and cookies are one of the greatest treats out there. So clearly breakfast + cookies = pure bliss.




I  firmly believe any opportunity to add more peanut butter to your diet should be seized wholeheartedly. Especially when this addition to your diet comes in the form of a cookie that has no eggs, no added sugar, no flour, no butter, and no oil.

Healthy Peanut Butter Banana Oatmeal Cookies

Ingredients:
  • 2 Ripe Bananas, Mashed
  • 1/2 C. Honey Roasted Peanut Butter (or whatever you have on hand)
  • 2/3 C. Unsweetened Applesauce
  • 1 tsp. Vanilla
  • Pinch of Salt
  • Dash of Cinnamon, Nutmeg, and Cloves (Optional)
  • 1 1/2 C. Oats (I used old fashioned)
  • Optional add ins like 1/4 C. Nuts (I used honey roasted peanuts), Unsweetened Shredded Coconut, Peanut Butter Chips, Chocolate Chips

Directions:
Preheat the oven to 350 F. Line a baking sheet with parchment paper or spray with cooking spray and set aside. In a large bowl, mix the banana, peanut butter, applesauce, vanilla, and spices (if you used any). Add in oats and any other nuts, chocolate chips, or add-ins you desire. Mix until combined.
Spoon cookies onto the lined or sprayed baking sheet. Sprinkle coconut or add extra chocolate and peanut butter chips on top. You can flatten the dough slightly or leave it in ball form (I left them in balls to have thicker cookies). Bake for 25-30 minutes or until light golden brown. I refrigerated these, but seal in an airtight container, and they should be alright!


Happy Friday! I've only just realized that it's August 1, and I'm in denial. Summer has a funny way of just flying by. I swear it was June 1 yesterday.

  12. It's August 9-- and I'm still in denial about it getting late in the summer. Weather's fine so I'm just ignoring that fact. Your cookies look fabulous and healthy! I should give them a try with almond butter (I'm allergic to peanuts so I substitute).
