First things first, MERRY CHRISTMAS!

I hope your Christmas was filled with good food, friends, family, presents and a lot of joy. And too many cookies. And maybe even some snow. Long story short, I hope your Christmas was as wonderful as you are.


If I've learned anything during this Christmas vacation it's that the only thing better than eating chocolate cake is baking chocolate cake with your mom. 



My mom is the cutest human being on this planet, a domestic goddess, and my favorite person to bake with in this entire world. And she poses for all my pictures while keeping the eye rolling to a minimum. What a woman.


It's Christmas, so tis the season to binge bake while listening to Mariah Carey and Michael Buble 24/7, right? All jokes aside, this chocolate cake is basically why Christmas is my favorite holiday. My dad calls it "the awesomest cake eva". He really has no credibility whatsoever as a food critic, but take his word for it, this cake is good.





Homemade Chocolate Cake

Ingredients:

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 stick margarine or butter
  • 4 tablespoons of Hershey's dry cocoa
  • 1/2 cup crisco oil
  • 1 cup water
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 eggs (slightly beaten)
  • 1 tsp vanilla
  • 1 tsp cinnamon 

In a large mixing bowl combine the sugar and flour. Set aside. In a saucepan boil the butter, cocoa, crisco oil and water and pour over the dry ingredients. Mix well. Add the buttermilk, baking soda, eggs, vanilla, cinnamon and mix. Pour batter into a bundt pan and bake at 350F for 35 minutes.




Chocolate Icing

Ingredients:
  • 1 stick of margarine
  • 4 tablespoons milk
  • 4 tablespoons cocoa
  • 2 cups powdered sugar 
  • 1 tablespoon vanilla
In a saucepan heat the margarine, milk and cocoa. Bring the ingredients to a boil. Remove the sauce pan from heat and mix in the powdered sugar and vanilla. Pour the icing over the cake.




Life's short, so eat dessert first, and remember, calories consumed during the Holiday season don't count. :-)
