Vegan Peanut Butter Banana Breakfast Cookies

Sometimes you meet a person, and you just click. It's a feeling that I can't adequately describe. You feel like you've known them for your entire life even though you've only known them for a short period of time. It's one of the rarest/greatest things in life. 

To me, Leigha from The Yooper Girl is this kind of person. She loves cats, running, good food, traveling and life in general, and if you haven't noticed, that's right up my alley. I'm not sure how a Michigan girl ended up finding this Texas girl's little corner of the internet, but in less than two yeasr, Leigha became one of my favorite humans in the world. 

With this in mind, 2 years ago today, Leigha started her blog. Today, in celebration of this awesome achievement, I'm linking up with Sunnie from Modern Girl Nutrition, Josefine from The Smoothie Lover and the (blog) birthday girl herself to give you some of our favorite recipes. (Please pretend this candle is a two, I couldn't find a two anywhere!)

Personally, I think the best (and only) way to celebrate any achievement is with the best things in life aka peanut butter, bananas, chocolate and a whole lot of oats. 

I can see my Aunt Pam (and avid peanut butter and banana hater) cringing all the way in North Carolina. Because apparently not everyone loves the flawless combination of peanut butter and bananas. If you do, however, today's your lucky day. This recipe is for you. 

I'm one of those people who loves breakfast. Sometimes I get excited to go to bed because I know that I can eat breakfast food when I wake up. Seriously, I'm convinced that breakfast is my soul mate. But, like most teenagers, I'm terribly busy. I don't always have time to whip up a Food Network worthy breakfast or to bake a different snack every day to eat after school. 

These cookies are the solution to every busy breakfast lover's (like me) problems. They're vegan, healthy, easy to make, full of peanut butter and the perfect thing to eat while reading Leigha's blog as you help her celebrate this major milestone. 

Vegan Peanut Butter Banana Cookies
Prep Time: 10 minutes
Cook Time: 10-15 minutes
Servings: 12

  • 1 Banana (mashed)
  • 1/2 cup Peanut Butter
  • 1/2 cup Sugar (or sugar substitute)
  • 1 cup Quick Oats
  • 1/2 cup Whole Wheat Flour
  • 1/4 cup Almond Milk (I used unsweetened vanilla, but regular milk is fine too!)
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  • 1/4 tsp Baking Soda
  • As much chocolate chips/add ons as you like!

Preheat oven to 350F. Mix all ingredients together in a large bowl. Spoon tablespoon size balls of dough onto a cookie sheet. Bake for 10-12 or until lightly brown.

You've got to give me something with white chocolate, toffee, cashews, vanilla......... I know you have something I would love. (the oatmeal, without the bananas, is a good choice - because I do love oatmeal!). I need you to come pick me some more blueberries this summer!!
