Peanut Butter Cup Energy Balls

I'm not going to deny that making this snack was all part of a master plan to make countless puns about my "balls" in a blog post.

My family is comprised of people who can't let the opportunity to make endless puns (albeit really bad puns) pass us by. So, after the "I'm going to go take pictures of my balls!" and the "Are those your balls?" and the "I just need to post some balls on my blog!", I'm finally sharing this recipe with you and stopping this neverending cycle of awful jokes.

A few weeks ago, I bought some dates at the grocery store and was super pumped. I was 80% sure that I was going to become one of those girls on Instagram who is always wearing nice yoga pants and making really healthy food in the kitchen when she's not traveling around the world and doing sun salutations in exotic places. Long story short, I got the yoga pants part down, but the dates just sat in my pantry for a few weeks. It happens.

I finally got my life together and decided I was going to make something with dates. I guess you could say, I decided that I was going to get ballsy in the kitchen. (Okay, wow, I swear I'm done with the puns now. Just be glad I spared you from all the puns about using dates.) This is the result.

  • 5 tbsp quick cooking oats
  • 5 tbsp peanut butter
  • 1 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 7-8 dates
  • 1 tbsp water
  • pinch of salt
  • coconut for topping

Mix the oats, peanut butter, vanilla, cocoa powder and dates in a food processor. Once everything is mixed (it all looks very crumbly), add the water and salt (if needed). Process until smooth. Roll dough into small balls. Depending on how big you want each ball to be, the recipe makes 7-10 balls!

  3. Love me some good ball puns. Also, that's exactly how I feel whenever I buy a food that healthy living bloggers use religiously, like dates or coconut flour or avocados.

  4. Yay for yoga pants! :P And I'm with ya! I have a container of dates that I haven't gotten around to finding uses for, but in my defense, it's a Costco-sized tub! It may take some time, but these would be perfect to start off with!
